LOW FAT LEMON CRINKLE COOKIES
1 package lemon cake mix
1 egg, lightly beaten
2 cups Cook Whip, thawed (8 oz)
1/2 to 1 cup powdered sugar
Combine all ingredients. Form balls (batter is sticky)
with tablespoon and roll in powdered sugar. Place
on a baking sheet. Bake 8-10 minutes until edges are
browned. Let cool 1 minute on baking sheet before
moving to wire cooling rack. YUMMY!

SLOW COOKER LEMON GARLIC CHICKEN
1 tsp dried oregano
1/2 tsp salt
1/4 tsp ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
1/4 cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 tsp chicken bouillon granules
1 tsp chopped fresh parsley
In a bowl, mix the oregano, salt & pepper and rub onto chicken.
Melt the butter in a skillet over medium heat and brown the chicken
in the butter for 3-5 minutes on each side. Place chicken in a slow
cooker.
In the same skillet, mix the water, lemon juice, garlic and bouillon.
Bring the mixture to a boil and then pour over chicken in cooker.
Cover, cook on high for 3 hours or low for 6 hours. Add parsley to
the cooker 15 to 30 minutes before the end of cooking time.

1 8oz pkg cream cheese, softened
1/3 cup sugar
2 tsp lemon juice
1/3 cup oil
2 eggs
Mix dry cake mix, 1 egg and 1/3 cup oil until crumbly, reserving 1 cup of mix.
Pat remaining mixture lightly in an ungreased 13x9x2" pan. Bake 15 minutes
at 350 degrees. Beat cheese, sugar, lemon juice and egg until light and smooth.
Spread over baked layer. Sprinkle with reserved crumb mixture. Bake for 15
minutes longer. Cool. Cut into bars.
